Tuna cuisine for me is limited to deep-fried tuna fillets, inihaw na panga, and the occasional paksiw or deep-fried tuna tail.  But dining at General Santos City’s JAMS Resto Bar really opened my eyes to the wonders and endless possibilities of tuna cuisine.

Imagine feasting on sauteed tuna innards, sizzling tuna tendons, tuna kilawin, tuna kebab, and tuna bagaybay along with tuna kinilaw, grilled tuna belly, and deep-fried tuna tail. A pure gastronomic bliss, I tell you!  Everything was delicious that I thought only somebody who can work wonders in the kitchen can whip up a feast like that.

And if I was delighted and surprised by JAMS Resto Bar’s menu offerings, I was even more delighted to find out that the genius behind JAMS Resto Bar is Ms. Sol Manangquil, GenSan’s Queen of Tuna Cuisine.  Ms. Mananquil is a good family friend and although I have always known her as an  astute businesswoman, I never guessed that she weaves magic in the kitchen.  And when asked in an interview with Avel Manansala of  GenSantos.com on how she developed her  recipes, Sol Mananquil reveals:

I substitued the usual pork and chicken with tuna in a variety of Filipino dishes. Some actually worked and some simply didn’t taste right.  I also used the entrails and the innards plus some other usually unwanted parts.  I felt that it would be a senseless waste to throw these parts away.  Finally, I had compiled more than a couple of recipes to fill up my own menu.
